Mutton cutlet recipe

                                                                                        MUTTON CUTLET

INGREDIENTS

  • Mutton kheema – 250 GMS
  • Mashed potato – 150 gms
  • Ginger garlic green chilli paste – 1 ½  tbsp
  • Finely chopped coriander leaves – 1/3 cup
  • Garam masala – 1 tsp
  • Chaat masala – 1tsp
  • Finely chopped onion – ½ cup
  • Oil for shallow fry
  • Salt as per taste
  • Cornflour – 2 tbsp dissolved in 1 cup water
  • Bread crumbs for coating

PREPARATION

  1. Clean the kheema by picking . Soak in water for 10 minutes to remove excess blood. Drain and rinse . Pressure cook the kheema upto 2 whistles. Off the flame and remove the kheema and drain the excess water by keeping in colander .Squeeze the extra water with hands. Keep the kheema aside.
  2. Take a small pan heat 2 tsp oil. Add the ginger + garlic + green chilli paste ,fry till raw smell leaves.add garam masala stir and off the flame.

METHOD

Take the cooked mutton kheema in a big plate.

Add the mashed potato  + fried ginger, garlic ,green chilli paste with garam masala + coriander leaves + salt + onion + chaat masala  and mix well with clean hands.

Take a handful of this mixture and make balls of it by rolling in hands .Flatten it and give desired shape.

If time provides , keep in fridge for sometime .

Take each cutlet dip in cornflour solution, then roll it in the bread crumbs. Repeat this with all the cutlets.

Refrigerate it for sometime or directly fry it.

Shallow Fry it on both sides till golden brown colour.

Remove on absorbent paper.

Garnish with mint leaves.

Serve with green chutney and onion rings

NOTE

  1. Instead of potato you can add egg for binding.
  2. For kids instead of adding green chillies add pepper pwdr.
  3. You can also add boiled green peas.
  4. For coating you can also use semolina[rava].
  5. Use the cutlet in burgers or sandwiches or roll it in chapatti.
  6. Instead of corn flour mixture you can use beaten egg.
  7. This cutlet can be frozen upto a week, and fried and baked when ever required.
  8. Bake it at 425 F preheated oven for 9 minutes on each side
  9. Instead of mutton you can use other minced meat or even boiled and shredded fish.
  10. Vegetarian use mixed veges instead of meat.
  11. You can omit the coating part and directly fry it.
