AAM KA CHUNDA

INGREDIENTS

  • Green Raw mango grated – 1 cup [it should not be ripen ]
  • Salt – ½ tsp or as per taste .
  • Turmeric pwdr – ½ tsp
  • Sugar – ¾ cup or 1 cup [even jaggery will do ]
  • Chilli pwdr – 1 tsp or as per taste
  • Roasted cumin pwdr – ½ tsp

PREPARATION

  1. Peel the mango and grate it .
  2. Add salt and turmeric pwdr ,mix well and keep aside overnight for marination.
  3. The mango will sweat [leave water ]
  4. Squeeze of the excess water – [ this is optional ]

METHOD [ COOK ]

Add the sugar and mix well .

Heat a thick bottom pan .

Add the mango mixture ,stir and cook till it the sugar melts completely .

The mixture will start bubbling.

Keep stirring and cook till one string consistency .

Don’t overcook ,else the syrup will harden.

Off the flame and allow it to cool .

Once it cools add the chilli pwdr + jeera pwdr .

METHOD – 2  [ SUN DRY ]

Peel the mango and grate it .

Add salt and turmeric pwdr ,mix well and keep aside to marinate for an hour or 2 hrs.

The mango will sweat [leave water ]

Squeeze of the excess water – [ this is optional ]

Add the sugar and mix well .

Take this mixture in a steel vessel or jar [barni ] .tie the neck of the container with  a muslin cloth .

Keep it in the sun for 5 to 10 days .

Everyday in the morning ,keep it out and in the night bring it in.

Each morning before keeping out ,mix it with a clean dry ladle .

Once it reaches the right consistency – the mixture becomes sticky ,add in the chilli pwdr + jeera pwdr and mix well .

Store it in a clean dry jar.remains good for months without refrigeration .

A good combo for parathas /chapatti /theplas etc.

NOTES

  1. Some add a tiny piece of cinnamom and a clove .
  2. With jeera pwdr some add garam masala pwdr.
  3. Y not try chaat masala pwdr .
