Aam papad recipe

       AAM PAPAD / MAMLA  / AMBA WADI  /  MANGO LEATHER

Aam papad is an Indian fruit leather made out of mango pulp mixed with concentrated sugar solution and sun dried. It is also known as aamba sadhaa, Aamta, amawat, Maanga Thera, mamidi tandra, aamsotto and amba vadi. Traditional Aam Papad is sweet, although it is available in different varieties.

Aam papad recipe

INGREDIENTS

  1. Mango – ½ kg
  2. Sugar – 2 or 3 tbsp or as per the sweetness of the fruit and your taste
  3. Cardamom pwdr – a pinch
  4. Ghee to grease the plate

Peel chop and blend the mango + sugar + cardamom into fine puree.

Take the puree in a pan, stir and cook for 7  minutes on medium flame.

Grease a plate with ghee.

Spread the mango pulp on the plate into a medium thick sheet .

Don’t make very thin else it will become hard on drying .

Keep it under sunlight for 1 or 2 day. [ if it is sunny it takes 1 day]

Run a sharp knife around the edges of the plate.

Cut it into desired shape.

Store it in air tight container.

NOTES

  1. I have read somewhere you can also make it without cooking ,that is directly spread the blended mango pulp and dry it .[ never tried it ]
  2. You can give a variation by adding kala namak or pepper pwdr or chaat masala or ginger pwdr or saunf.
  3. Use totapuri [ parrot shape mango ] aam for perfect taste.
  4. No need to add water.
  5. You can dry the other side, the next day.
  6. Try to spread thin layer ,so that it dries quickly.
  7. To make layered aam papad like the readymade ones ,you have to pour one layer allow it to dry for 5 hrs , again pour a layer on top of it and dry again for few hrs. Repeat the process till you get the thickness you want.
