Aloo methi ki sabji recipe

ALOO METHI KI SABJZI IN SOUTH INDIAN STYLE / FENUGREEK AND POTATO STIR FRY WTH COCONUT.

Aloo methi ki sabji

INGREDIENTS

  • 3 cup – fresh methi (fenugreek) leaves (cleaned, washed ,strained and finely chopped)
  • 2 –  medium peeled and cut into small cubes potatoes.
  • 1 – big onion finely chopped .
  • 1 or 2 – flakes of garlic (crushed) .
  • Salt To Taste.
  • ¼ tsp – turmeric powder.
  • 2 – green chilli chopped .
  • 1/2 tsp – cumin seeds (jeera).
  • 2-3 tbsp  – vegetable oil.
  • ¼ cup – freshly grated coconut for garnishing.

METHOD

  • Heat oil and add crushed garlic and fry till brown. Add cumin seeds and let it crackle.
  • Add onion and saute till light brown .
  • Add chillies.
  • Now add potatoes and mix well.
  • Add turmeric pwdr and salt .
  • Cook till potatoes are half done on a medium flame.
  • Add methi and cook on a medium flame till done and till water is fully absorbed.
  • Garnish with fresh grated coconut.
  • Serve the aloo methi hot with chapati or paratha.

NOTE

  1. To enhance the flavour more you can add lilltle kasoori methi pwdr also.
  2. Even tomato can be added.
  3. If you want to remove sourness from Methi leaves, then wash it 2-3 times in fresh water and while cooking it with any other ingredients such as potato, peas, paneer or anything, you just need to add little sugar and dry mango powder (Amchur) altogether. This is the best way to remove the bitterness from methi leaves.I have added coconut.
  4. You can add boiled  baby potatoes.
  5. If you don’t have fresh methi leaves you can add kasoori methi
  6. Instead of green chilli you can add red chilli pwdr.
  7. Seperate the leaves from the stalk and wash thoroughly to remove soil or any grime it might have on its leaves.
