American chop suey

INGREDIENTS

  • Chinese noodles pkt – 1
  • Oil to deep fry
  • Olive oil / oil – 1 tbsp
  • Finely chopped green chilli + garlic + ginger – 1 tbsp
  • Onion finely chopped – ½ cup
  • Beans chopped – ¼ cup
  • Carrot chopped – ¼ cup
  • Capsicum chopped – ¼ cup
  • Cabbage chopped – ½ cup
  • Pepper pwdr – ¼ tsp
  • Salt as per taste
  • Soya sauce – 1 tsp
  • Chilli sauce – 1 tsp or 1 ½ tsp
  • Vinegar – 2 tsp
  • Tomato sauce – 3 tbsp
  • Cornflour – 3 tbsp mixed with ½ cup water
  • Water / veg stock /chicken stock – 2 or 2 ½ cup
  • Sugar – 1 tsp [optional ]

PREPARATION

  1. Before you start keep all the ingredients ready .
  2. Boil the noodles in enough water till 80 % .[don’t overcook ]. Drain the water, spread it on a big plate to dry . Deep fry the noodles till crispy in small batches .  [ colour should not change ] . Remove on a absorbent paper and store it in a air tight container .
  3. Chop all the veges finely either into cubes or lengthwise or your choice.

METHOD

Heat oil in a pan , add green chilli + ginger + garlic and saute for few seconds .[colour should not change .

Add beans and stir fry on medium high heat for 1 minute.

Add capsicum + carrot and stir fry for 1 minute . [ veges should not become soft they should be crunchy]

Add cabbage and fry for few seconds.

Adjust salt + pepper pwdr + sugar .

Add all the 4 sauces , mix well and cook for few seconds.

Add 2 ½ cup of water and cook till it starts boiling.

Once it starts boiling add the corn flour mixture and mix well.

Stir and cook for 2 – 3 minutes. [till the raw smell of corn flour leaves and the gravy becomes thick and shiny ]

Off the flame.

Take some fried crispy noodles in  a  bowl and pour the hot gravy over it  , garnish with finely chopped spring onion greens  .and serve hot .

NOTES

  1. The noodles take lot of time to be fried . I fried the noodles on high flame ,by standing near the stove and stirring in between. If I would have fried them on low or medium then it would have taken more time.dont brown the noodles .
  2. Fry in small batches .
  3. You can fry the noodles before and store it in a airtight container.
  4. It has to be served hot .
  5. You can also add boiled and shredded chicken or paneer or tofu or sprouts or mushroom.
  6. You can also boil the veges first and then add.
  7. Actual recipe tastes sweet ,it asks for 2 tsp sugar. I did not add sugar as my family wanted spicy. Also tomato sauce gives a sweet taste .
  8. You can use egg noodles which are yellow in colour ,they taste better.
  9. U can also top it with a half fry egg while serving.
  10. Instead of plain water ,use chicken or veg stock .[ u can use maggi magic cubes to prepare it ]
  11. Instead of chopped ginger garlic , you can use 2 tsp of ginger garlic paste .
  12. You can take a mixture of fried crispy noodles + soft boiled noodles.
  13. Instead of topping the gravy ,you can mix it with the gravy and then serve.
  14. You can also add a pinch of ajinomotto.
  15. When u fry the noodles for chinese bhel ,you have to sprinkle cornflour.
