FISH BATTER FRIED

Battered  fried fish is a popular food in the United Kingdom, Ireland, Australia, New Zealand, Canada ,Germany ,Russia ,New York ,U.S and South Africa .Mostly they use beer or soda to mix the batter to make the batter light and  full of bubbles .The beer adds colour and taste. It also makes the batter light . Here instead of beer / soda , I have used eno pwdr . This dish is bland in taste ,so it  has to be served with some tasty dips / sauces / chutney .Cheesy sauce is a great combo for it . See that the fish is fresh without any smell ,as we are not going to add any Indian spice or masalas to marinate it .

Batter fried fish recipe

INGREDIENTS

  • Maida / APF – 1 cup + 2 tbsp
  • Cornflour – ¼ cup + 2 tbsp
  • Fresh Fish fillets – 300 gms or as required
  • Pepper pwdr – 1 tsp
  • Mixed herbs / oregano – 1 tsp
  • Baking pwdr – ½ tsp
  • Water to make the batter
  • Fruit salt /eno pwdr – 1 tsp
  • Salt to taste
  • Oil to deep fry

PREPARATION

  1. Clean ,wash ,rinse and pat dry the fillets. Rub little salt and pepper pwdr all over and keep aside.
  2. Make a dry mixture of 2 tbsp corn flour and 2 tbsp maida and keep aside.
  3. Keep all ingredients ready ,once u make the batter immediately u have to use it as we are adding eno pwdr .

METHOD

Take maida + corn flour + salt +  pepper pwdr +  mixed herbs + eno , mix water and make batter of medium consistency .[ thick enough to coat a spoon ]

Heat oil in a deep pan or kadai . [ not flat pan ]

Dust the fish fillets with dry flour mixture. See that it is coated all over. Shake of the excess flour.

Dip the dusted fillets into the batter , let the excess batter drip off.

Slowly slide the fish into the hot oil. [ few fillets at a time ,don’t over crowd ]

Flip and fry on both the sides till golden brown. [ fish has to cook ]

Drain and remove on a absorbent paper.

Serve when hot

NOTE –

  1. You can add a pinch of turmeric pwdr to the batter .
  2. Instead of eno pwdr ,use soda or beer to make the batter.
  3. It has to be deep fried. [ not shallow ]
  4. Take fillets of medium thickness not very thick.
  5. You can try marinating the fish with lemon or any other spice of your choice to given Indian touch .
