BESANWALI SIMLA MIRCH / CAPSICUM STIR FRIED WITH GRAM FLOUR / CAPSICUM ZUNKA

INGREDIENTS

  • Capsicum – 4
  • Gram flour – 3 tbsp
  • Oil – 2 or 3 tbsp
  • Jeera – ½ tsp
  • Fennel seeds – ½ tsp
  • Asafoetida – 2 pinch
  • Turmeric pwdr – 1/4 tsp
  • Chilli pwdr – 1tsp
  • Coriander pwdr – 1tsp
  • Garam masala – ¼ tsp
  • Amchur pwdr – ¼ tsp
  • Sugar – ¼ tsp [optional]
  • Salt as per taste
  • Coriander leaves finely chopped for garnishing

PREPARATION

Deseed the capsicum and chop it into small cubes or thin strips.

Roast the besan /gram flour on low flame for 2-3 minutes till u get a nice aroma and the colour doesn’t change.

METHOD

Heat oil in a pan .

Add jeera + fennel seeds/saunf and let it splutter.

Add the capsicum and fry it on medium flame for 2 minutes by tossing or stirring.

Add turmeric + coriander pwdr + chilli pwdr  + asafoetida + garam masala pwdr + amchur pwdr + salt + sugar .

Fry for 2-3 minutes [it should not become very soft ,it should have a crunchy taste]

Now add the besan little by little, mix well so that no lumps are formed.

Again cook for 2 minutes.

Finally cook on high flame for 1 minute by continuously stirring to get the crispy texture of the besan.

Off the flame garnish with finely chopped coriander leaves.

Serve as a side dish.

NOTES

It’s an instant recipe done in a jiffy.

We don’t have to cover and cook.

Besan has to be added little by little – 1 tbsp at a time or lumps will form.

Oil consumption is more in this recipe.

You can sprinkle little water.

You can also add onion ,green chilli, curry leaves ,mustard seeds.

Instead of amchur you can add finely chopped tomatoes.

Instead of capsicum you can try cabbage, ladys finger, onion methi leaves etc
