                                                          GILI BHEL PURI

INGREDIENTS

  • Puffed rice / kurmura – 4 cup
  • Very finely chopped onions – ½ cup
  • Finely chopped onions – ¼ cup deseeded [not soft ]
  • Boiled and cubed potatoes – ½ cup
  • Very fine sev as required
  • Papdis or pani puri’s poori crushed – as required
  • Masala dal and roasted peanuts – 2 tbsp
  • Very very finely chopped raw mango – 2 or 3 tsp
  • Chaat masala – 1 tsp
  • Lemon juice – 3 tsp
  • Very finely chopped coriander leaves as required
  • Green chutney – 3 tbsp or as required
  • Sweet chutney – 8 tbsp or as req
  • Garlic chutney – 1 tbsp

PREPARATION

  1. If the kurmura is not crisp – stir and dry roast it for sometime in a pan and let it cool.[don’t brown it ]
  2. Keep everything ready before you assemble.
  3. GREEN CHUTNEY – grind 1 cup coriander leaves + ¼ mint leaves + green chilli + roasted jeera pwdr + kala namak +small piece of ginger + 1 tsp lemon juice .
  4. SWEET CHUTNEY – refer here – khajur aur imli ki chutney
  5. GARLIC CHUTNEY – refer here – Red chilli garlic chutney recipe

METHOD

Take the puff rice and all the dry ingredients in a mixing bowl and mix it well.

Then add the wet ingredients mix well.

Garnish with broken papdi + coriander leaves + masala dal + fine sev .

Serve with papdi immediately  or it will become soggy.

  1. Adjust all the ingredients as per your taste.
  2. U can also add sprouts
