BLACK PEPPER PULAO

INGREDIENTS

  • Cooked rice – 4 cup
  • Mix veges – 1 or  2 cup [small pieces of cauliflower/ peas /potato / carrot /beans ]
  • Oil + ghee – 1 ½ tbsp
  • Black pepper – 1 ½ or 2 tsp
  • Jeera – 1 tsp
  • Ginger garlic paste – 1 ½ tsp
  • Onion finely chopped – 1
  • Green chilli – 1 [optional ]
  • Garam masala pwdr – ½ tsp
  • Curry leaves – few
  • Finely chopped coriander leaves for garnish

PREPARATION

Dry roast the pepper and jeera till aromatic .Allow it to cool .Grind it into a fine pwdr .

METHOD

Heat oil + ghee in a pan ,add onion + curry leaves + green chilli and fry till light brown .

Add ginger garlic paste and fry till raw smell leaves .

Add the veges and mix well .

Sprinkle little water and mix.

Cover and cook till the veges are done .[don’t over cook ]

Add salt + garam masala pwdr + the pepper pwdr and mix well.

Add the cooked rice and mix well .

Cook for a minute till the rice is well coated with the masala.

Off the flame and garnish with coriander leaves .

Serve with any raita / side dish / papad / gravy .

NOTES

  1. It was quite spicy .Adjust pepper pwdr accordingly.
  2. You can use leftover rice .The rice grains has to be separated and grainy ,not mushy.
  3. Reduce the quantity of pepper if making for kids .
  4. I chopped the veges small to reduce cooking time and so that kids don’t discard it .

However, even home-made powder retains its freshness for only 3 months, while whole peppercorns can keep their freshness indefinitely. Thus, adding a pinch of black pepper to every meal helps to improve both taste and digestion. It also improves your overall health and well-being.
