Bengali Begun Bhaja (Baingan Bhaja)

Bengali Begun bhaja or Baingan Bhaja recipe is a popular traditional Bengali dish of marinated thick eggplant or aubergine slices pan fried in mustard oil. One of the finest Bengali recipes that people particularly pair with Khichuri

INGREDIENTS

  • Brinjal – 1 big
  • Turmeric pwdr – ½ tsp
  • Chilli pwdr – 2 tsp
  • Garam masala pwdr – ½ tsp
  • Amchur pwdr – ¼ tsp (optional) Or lenon juice
  • Ginger garlic paste -1/2 tsp
  • Salt – as per taste
  • Sugar – 1/2 tsp
  • Besan flour 1 tbsp
  • Chaat masala
  • Oil /mustard oil for tava fry
  • Rice flour to dust…so that it does not absorb oil (optional )

METHOD

Wash and slice the brinjal into mediumm thin roundels as shown in pic.

After slicing, soak them in salt water.[remove it only when you want to use]

Mix the masalas – chilli pwdr + turmeric pwdr + garam masala + ginger garlic paste + amchur pwdr + sugar + salt .[no water]

Take each slice of brinjal , wipe it and dust or rub it with the masala mixture completely.

Keep aside for sometime for absorption.

After 5 – 10 minutes, dust the slices with rice flour [optional]

Heat oil for shallow frying.

Place the slices on the pan and fry for 4 – 5 minutes on each side on medium flame]

Fry till golden brown.

Remove on absorbent paper.

Sprinkle little chaat masala.

Serve as a side dish.

NOTES.

  1. Masalas can be added as per your choice may be amchur pwdr , ajwain , fennel seeds or even sambar masala.
  2. If you don’t dust rice flour,it absorbs lot of oil.
  3. Rice flour also gives a crispy texture to it.
  4. Thinner slices take less time to cook
  5. Besan is added for binding
  6. The traditional authentic Bengali begun bhaja recipe do not make any use of flour.
  7. use long or large variety of baingan or eggplant.
  8. buy large baingan, which is not very heavy in weight. Because, heavy weight indicates more of seeds in to it. Select clean, shiny, and light weight aubergines to avoid seeds, so that you get more of its flesh.
  9. if you want to enjoy authentic begun bhaja then always fry in mustard oil 
  10. sugar is also must .
