   CARROT CURD SALAD

INGREDIENTS

  • Grated carrot – 1 ½ cup  [ squeeze the excess juice ]
  • Curd – ½ cup
  • Sliced onion – ¼ cup
  • Finely chopped coriander leaves – 1 tbsp or more
  • Finely chopped green chilli – as per taste
  • Skinless roasted peanut – 2 tbsp [ coarsely crushed ]
  • Chaat masala – ¼ tsp
  • Roasted jeera pwdr – a generous pinch
  • Salt to taste

METHOD

Mix all the above ingredients with clean hands .[mash it ,so that all the ingredients blend together well ]

Serve chilled .

VARIATION – You can give a tadka [temper ] of ghee + hing + rai

NOTES

  1. No need to add sugar as the carrot has sweetness .
  2. You can make a mixture of carrot + beetroot + radish .
  3. It should be more of carrot and less of curd .
  4. It is ok if you don’t squeeze the juice from the carrot .[ juice can be used to add in gravies or soup or kneading dough ]
  5. You can avoid curd and make a dry salad – just drizzle few drops of lemon juice.
  6. For kids avoid green chilli and add pepper pwdr .
  7. U can also add finely chopped tomatoes .
  8. Same recipe goes for beetroot /cabbage /cucumber /onion .
  9. For more colour we can add purple cabbage .
