                                                               CARROT STIR FRY / CARROT PORIYAL

Carrot poriyal is a simple South Indian side dish made with carrots, spices and curry leaves.It’s one of the easiest Indian recipes

The fiber in carrots can help keep blood sugar levels under control. And they’re loaded with vitamin A and beta-carotene, which there’s evidence to suggest can lower your diabetes risk. They can strengthen your bones. Carrots have calcium and vitamin K, both of which are important for bone health.

INGREDIENTS

  • Carrot grated – 2 cup
  • Freshly Grated coconut – 2 or 3 tbsp
  • Mustard seeds -1 tsp
  • Urad dal – ½  tsp
  • Finely chopped onion – 1
  • Green chilli stilted or chopped  – 2 or as per taste
  • Curry leaves – 1 sprig
  • Oil – 2 tsp
  • Salt as per taste 

PREPARATION

Wash, peel and grate carrots. Use grater with big holes .

OR

You can also finely chop it.

METHOD

Heat 2 tsp of oil in a pan or kadai.

Add mustard seeds and let it splutter.

Add hing , urad dal .

Fry the dal till light golden brown.

Add the onion + green chilli + curry leaves. and fry till translucent.

Add the chopped OR grated carrots.

Cook on medium flame stirring from time to time.

Add  salt.

Cook till  the carrots become little soft .

Add grated coconut, mix well and switch off the flame.

Serve as a side dish for steamed rice with dal sambar or curd.

NOTES 

  1. Don’t overcook the carrot let it have the crunchy texture.
  2. If you are chopping then while cooking sprinkle little water ,cover and cook.
  3. You can also add whole red chilli instead of green chilli
