                                                        CHETTINAD FISH CURRY

INGREDIENTS

  • Fish – 300 gms
  • Oil – 1 tbsp + 2 tsp
  • Jeera – 1 tsp
  • Fennel seeds – 1 ½ tsp
  • Black pepper – 2 tsp
  • Coriander seeds – 2 tbsp
  • Shallots / onion sliced – 1 cup
  • Garlic – 5
  • Soft tomatoes – 1 big
  • Freshly grated coconut – 4 tbsp
  • Red chilli pwdr – 2 tsp or as per taste
  • Turmeric – ½ tsp
  • Tamarind – small lemon size or as per taste [ little bigger than marble ]
  • Mustard seeds – 1 tsp
  • Fennel seeds – ½ tsp
  • Fenugreek seeds – ¼ tsp
  • Water as required
  • Coconut oil – 2 tsp
  • Curry leaves – few
  • Green chilli – I slit
  • Coriander leaves for garnish

PREPARATION 

  1. Clean ,cut wash and rinse the fish .Rub little salt + turmeric all over ,keep aside for 10 mins .Wash and drain the excess water.
  2. Soak the tamarind in ½ cup of hot water and extract the juice .

METHOD FOR MAKING MASALA

Heat 2 tsp oil in a pan add coriander seeds + pepper + fennel seeds + jeera  and fry for few seconds .[ don’t burn ]

Add onion and fry till translucent .

Add garlic and fry .

Add tomatoes and fry till soft and mushy .

Add red chilli pwdr + turmeric pwdr + salt and fry .

Add coconut and stir fry for a minute and off the flame .

Once cooled grind it to a fine paste by adding tamarind extract + ½ cup water .

METHOD FOR MAKING CURRY

Heat 1 tbsp oil in a pan ,add mustard seeds +  fenugreek seeds + fennel seeds + curry leaves and fry . [ don’t burn ]

Add the masala paste and stir fry for 1 or  2 mins .

Add  2 cup water ,allow it to boil . [ the gravy will be thin now ]

Once it starts boiling add the fish + green chilli .

Cook on medium flame for 20 mins till the fish is cooked and the gravy thickens. [don’t cover while cooking ]

*** cooking time depends on the size of the fish pieces .

Once done drizzle the coconut oil and sprinkle the coriander leaves and off the flame .

Chettinad fish curry is ready to serve .

NOTES

  1. Adjust spice according to taste .
  2. Take a combo of Kashmiri chilli pwdr + regular chilli pwdr for colour .
  3. Instead of powder you can use whole red chilli and roast it with the coriander seeds .
  4. Instead of coriander seeds ,you can add 1 tbsp of coriander pwdr while adding chilli pwdr .
