CRISPY Chicken cutlet RECIPE

                                            CRISPY CHICKEN CUTLET / PATTIES / TIKKIS RECIPE

INGREDIENTS

  • 250 gm chicken kheema / minced chicken [ cleaned ,washed and drained]
  • 150 gm potatoes [ boiled and mashed ]
  • 1 tbsp ginger-garlic paste
  • 2 – 3 green chillies finely chopped
  • 1 cup finely chopped coriander leaves
  • 1 tsp chaat masala
  • 1 tsp garam masala
  • 1/2 cup fine crushed vermicelli [sevai] or fine semolina
  • 1 cup bread crumbs
  • Salt as per taste
  • Oil for shallow fry
  • 2 tbsp of corn flour + 2 tbsp maida + water  [ make a watery batter]

PREPARATION

Clean ,wash rinse and soak the chicken kheema for 10 mins – to remove any blood and also to remove meaty smell .Drain and keep in a sieve to drain of the excess water .

METHOD

Take a pan add 1 tsp oil.

Add ginger garlic paste and saute till raw smell goes.

Add the chicken with little salt and fry , till complete water evaporates and the chicken becomes dry.

Keep aside to cool.

**** here if you want you can blend the chicken .

In a big plate take the chicken and mix in mashed potato, green chilli, chaat masala ,garam masala, salt, coriander leaves.

Mix and knead well.

Now take a hand full of this mixture and give it a shape of your desire [oval,cylindrical, square or circle].

Keep it in the fridge for sometimes. [optional ]

Mix the vermecilli / sooji and the bread crumbs in a flat plate

Take one cutlet dip it in the cornflour maida mixture .

Roll the cutlet in the bread crumbs mixture, let it coat well from all sides.

Again keep it in the fridge for sometime. [ optional ]

**** you can double coat it .

Take enough oil in a frying pan and shallow fry the cutlets till each side gets golden colour.

Remove it on absorbent paper.

Serve hot with green mint + coriander chutney or any sauce./

Take a pav or bread slice  …spread green chutney .place 2 cutlets + onion rings and serve

NOTE

  1. Instead of potato you can add egg for binding.
  2. Mutton kheema tastes better than chicken kheema – Mutton cutlet recipe
  3. For kids instead of adding green chillies add pepper pwdr.
  4. You can also add boiled green peas.
  5. For coating you can also use semolina[rava].
  6. You can avoid vermecilli and just use bread crumbs.
  7. Use the cutlet in burgers or sandwiches or roll it in chapatti.
  8. Instead of corn flour mixture you can use beaten egg.
  9. This cutlet can be frozen upto a week, and fried and baked when ever required.
  10. Bake it at 425 F preheated oven for 9 minutes on each side
  11. Instead of chicken you can use other minced meat or even boiled and shredded fish.
