CHICKEN TIKKA MASALA

INGREDIENTS

  • Boneless chicken – 250 gms
  • Onion  chopped – 1 big
  • Onion – 1 small [cubed and separated ]
  • Tomato – 2 big
  • Capsicum – 1 [ cubed ]
  • Green chilli chopped – 1 or 2
  • Red chilli pwdr – 1 ½ tsp or as per taste
  • Cumin pwdr – ½ tsp
  • Turmeric – ¼ tsp
  • Coriander pwdr – 3 tsp
  • Garam masala – 1 tsp
  • Ginger garlic paste – 1 tbsp
  • Few whole garam masala [sai jeera ,black pepper, cardamom ,clove, cinnamom, bayleaves]
  • Sugar – ½ tsp
  • Kasoori methi leaves or  pwdr – ½  tsp
  • Oil + ghee – 2 or 3 tbsp
  • Tomato ketchup – 2 tsp
  • Salt as per taste
  • Fresh cream – 2 tbsp
  • finely chopped coriander leaves for garnish

PREPARATION

  1. Make puree of the onion + tomato + ginger garlic paste .
  2. Prepare chicken tikka following my tikka recipe :- Chicken tikka recipe   OR   get ready made chicken tikka or chicken tandoori [ if buying tandoori use only the flesh ]
  3. Fry the onion and capsicum in little oil and keep aside .

METHOD

Heat oil + ghee, add the whole garam masala and let it splutter.[ don’t burn ]

Add the onion + tomato + ginger garlic puree , fry till raw smell leaves and oil separates.

Add chilli pwdr + turmeric + coriander + garam masala + and fry till raw smell leaves.

Add 1 or 1 ½ cup water and cook for 2- 3 mins .[water to be added as per the consistency you want , the gravy has to be slightly thick  ]

Add tomato ketchup + sugar .

Add the fried onion + fried capsicum + chicken tikka and mix well.

Add kasoori methi and mix well.

Simmer for a minute and off the flame.

Garnish with finely chopped coriander leaves and fresh cream.

Serve as side dish for chapatti , naan or rice or parotta

NOTES

  1. I have used leftover chicken tandoori ,I removed the flesh and chopped it into small pieces.
  2. Adding ketchup + sugar + kasoori methi gives the restaurant taste.
  3. The same recipe goes for mushroom and paneer .
  4. You can also add whole fried cashew nuts.
  5. Adding fried onion cubes and capsicum also enhances the flavour and gives a restaurant look .
  6. Also you can add a pinch of tandoori colour.
