Coriander pakoras

                          KOTHIMBIR BHAJIA [ pakoda ] / CORIANDER LEAVES FRITTERS

INGREDIENTS

  • Finely chopped coriander leaves – 2 cup
  • Besan / gram flour – 1 cup
  • Rice flour – 2 tbsp
  • Chilli pwdr – ½ tsp or as per taste
  • Turmeric pwdr – ¼ tsp
  • Chaat masala – ¼ tsp
  • Asafoetida – a pinch
  • Ginger garlic paste – ½ tsp [ optional ]
  • Salt to taste
  • Oil to deep fry or shallow fry

METHOD

Take all the ingredients except oil and water  in a mixing bowl .

Mix it well with clean hands .[ coriander leaves may leave water ]

Gradually add water and make a smooth and thick batter .

Heat oil in a frying pan.

Drop in the batter with a spoon .

Turn and fry on all sides till golden brown .and crisp [don’t burn it ]

Remove it on an absorbent paper.

Serve hot with ketchup or any chutneys.

NOTES

  1. You can add a pinch of baking soda to the batter.
  2. Y not add finely chopped onions.
  3. For more flavour add chopped spring onions.
  4. The same batter goes for chilla also .
