INGREDIENTS

  • Very finely chopped palak /spinach – 4 cup [ 2 bunch ]
  • Finely minced garlic – 2 tsp [optional ]
  • White sesame seeds – 1 tbsp [ roasted ]
  • Chilli flakes – 2 tsp
  • Powdered sugar – 1 tsp [optional ]
  • Salt to taste
  • Cornflour – 1 tbsp [optional]

PREPARATION

  1. Roast the sesame seeds on low flame for sometime .[colour should not change]
  2. Clean ,wash and pat dry the leaves. Chop off the stalk /stem and only use the leaves.
  3. Arrange one leaf over the other and very finely chop it as shown in the pic. [thin ribbons /shredded ]
  4. If you want you can sprinkle the corn flour over the leaves . [OPTIONAL ]

METHOD

Heat oil in a frying pan on medium flame ,start frying the spinach in small batches till the spinach is crispy and dark green. [don’t burn it ]

Keep stirring while frying for even cooking.

Strain and remove on absorbent paper .

Now heat 1 tsp olive oil , add the minced garlic and stir fry .

Add the chilli flakes give a quick stir and off the flame .

Add this over the fried spinach , sprinkle the sesame + salt + sugar and toss it or mix it gently .

NOTES

  1. You can avoid tempering – Just deep fry the spinach add chilli flakes + sugar + salt + roasted sesame and toss well .
  2. There should be no water on the leaves ,it has to be dry.
  3. You can place the leaves in strainer and fry it instead of putting in the oil directly .
