INGREDIENTS

  • Bread – 12 slices [big ones]
  • Capsicum finely chopped – 1 small
  • Onions finely chopped – 1 small
  • Grated cheese – 1 cup
  • Finely chopped coriander leaves – 1 tbsp [optional]
  • Mixed herb or oregano – ¼ tsp
  • Pepper pwdr – ¼ tsp
  • Maida – ½ cup
  • Bread crumbs for coating
  • Oil for shallow fry

PREPARATION

  1. Roll a rolling pin over the bread slices to make it thin. Cut the bread into circles with a help of a mould or cutter as shown in the pic.
  2. Prepare a medium consistency batter of maida + water. [should not be very watery or the bread will become soggy]
  3. Make a mixture of capsicum + onion + coriander leaves + pepper pwdr + mixed herbs + grated cheese

METHOD

Take one circle and place the veg mixture in the centre.

Apply little batter on the edges of the circle with finger.

Place another bread circle on top and press the edges well, so that it doesn’t open.

Now dip this in the maida batter and coat it with bread crumbs. [ be quick while dipping in the batter or it will become soggy and break]

Repeat this procedure with the remaining bread slices .

Now either shallow fry it or deep fry it till golden brown.

Cut the disc in centre and Serve with any dips ,sauce or chutney.

VARIATION –

You can first make the bread pockets.

Microwave the mixture so that the cheese melts and then fill it in the bread pockets and serve. See the pic for bread pocket recipe or refer to my non veg bread pocket recipe below

NOTES

  1. Instead of maida batter , beaten egg will be a good option.
  2. It is difficult to dip in the batter as the bread soaks the water , so be careful. Just dip it lightly from the top on both the sides. *BE QUICK.
  3. Use big white sandwich bread ,so that you get big discs.
  4. Instead of circle ,just cut the corner of the bread and make square pockets and cut it diagonally.
  5. Vegetables have to be finely chopped.
  6. More the cheese better the taste.
  7. You can use any cheese or even a combo of different cheese.
  8. You can try this recipe with any filling.
  9. Instead of capsicum and onion try paneer.
