Eggless butterscotch cookies

                                 BUTTERSCOTCH COOKIES

INGREDIENTS

  • APF / maida – ¾ cup
  • Sugar pwdr – 2 or 2 ½ tbsp
  • Butter – 2 tbsp [ room temperature ]
  • Buttermilk – 4 tbsp [ 2 tbsp curd + 2 tbsp water mixed well ]
  • Butterscotch essence – ½ tsp
  • Baking soda – ¼ tsp
  • Butterscotch chips – 3 tbsp [ optional ]
  • Salt a pinch

PREPARATION

Mix the flour + salt + baking soda  + baking pwdr well .Sieve it twice for even mixing and keep aside .

METHOD

Take sugar + butter in a mixing bowl ,beat it till creamy .

Add essence + buttermilk and beat it again .

Now add the sieved flour mixture and mix well with a whisk or spatula .

Add butterscotch chips and mix it lightly .

Cover the bowl and refrigerate for half an hour .

Preheat the oven at 180 *C for 10 mins.

After 30 mins ,take small portions of the dough with a spoon,

Roll it with hands and flatten it slightly.

Arrange the cookies on the baking tray .

Bake it for 10 – 15 mins till the colour of the cookies changes a bit ,

Allow it to cool .The cookies become crisp after cooling else it will be soft .

IMP – baking time depends on the size of the cookie, so check while baking .
