 EGGLESS CARROT CAKE

INGREDIENTS

  • APF / maida – 1 cup
  • Baking pwdr – ½ tsp
  • Baking soda – ½ tsp
  • Finely grated orange carrot – 1/2 or  ¾  cup
  • Oil – ¼ cup [ odourless and colourless ]
  • Curd at room temperature – ¾ cup
  • Boiled Milk – 2 ½ tbsp
  • Sugar – 10 tbsp
  • Chopped walnuts – ¼ cup
  • Vanilla essence – ½ tsp
  • Cinnamon pwdr – generous pinch [optional ]

PREPARATION

  1. Preheat the oven at 180 * C
  2. Grease the baking tin .
  3. Finely grate the carrot.
  4. Sieve the maida + baking pwdr + baking soda .
  5. Mix the chopped walnuts to the sifted flour and mix well.

METHOD

Take the sugar in a mixie jar and grind it .

Add the curd + milk + oil to it and blend again for some time .

Remove it in a mixing bowl .

Add the vanilla essence + cinnamon pwdr + grated carrot and mix well.

Whisk it well.

Gradually add the sifted flour with walnut  and start mixing .

See that the walnut is spread evenly.

Pour the batter in the greased tin and tap it .

Bake it for 22  to 30 mins. [**Baking time is less as the batter is made of 1 cup flour ]

Check after 20 mins.

If the toothpick comes clean .Off the oven .

Allow the cake to cool for sometime.

Run a knife around the edges of the tin to loosen the cake.

Remove the cake .

Carrot cake is ready to serve with or without icing.

NOTES

  1. Y not bake it in cooker /pan / hundi / kadai .[ refer to my recipes below ]
  2. Walnut adds crunchiness to the cake, you can also add other nuts also.
  3. If you don’t have cinnamon pwdr, just grate the cinnamon and add.
  4. You can take ½ cup of maida and ½ cup of wheat flour OR ¾ cup of maida and ¼ cup of wheat flour.
  5. You can also use olive oil.
  6. The oil you use should not have colour or smell.
  7. Y not roast the carrot in little ghee and add.
