EGGLESS COCONUT CAKE

INGREDIENTS

  • Desiccated coconut powder – 1 ½ cup
  • Maida / APF – 1 cup
  • Milk powder – ¾ cup
  • Sugar – ¾ cup
  • Warm Milk – 1 cup
  • Vanilla essence – 1 tsp
  • Baking soda – ¼ tsp
  • Baking powder – 1 tsp
  • Ghee – 2 tbsp

PREPARATION

  1. Preheat the oven at 180 * C.
  2. Grease the tin .
  3. Powder the sugar.
  4. Sieve the maida + baking powder + baking soda twice and keep aside .

METHOD

Take warm milk in a mixing bowl .

Add ghee + milk powder + vanilla essence + sugar powder , beat it till smooth and creamy.

Add the flour mixture to the creamy batter and mix.

Add the coconut powder and mix well in one direction .

Pour the batter in a greased tin .

Bake it in preheated at 170 * C for 35 – 40 minutes .

Do the toothpick test.

Remove the cake and allow it to cool .

Run a knife around the edges of the tin and loosen the cake.

Remove and serve.
