How to make hot milk cake

Hot milk cake is a traditional two-layer cake, possibly from the Mid-Atlantic United States. … It differs from traditional sponge cakes in that it contains baking powder as leavening, and the eggs are beaten together whole instead of whipped as yolks and whites separately.

EGGLESS HOT MILK CAKE

WHY DO YOU PUT MILK – The protein in milk softens, contributes moisture, and adds colour and flavour to baked goods. It’s a double-whammy in terms of function, as it gives the dough or batter strength and structure, as well as adds tenderness, flavour and moisture.

INGREDIENTS

  • Maida – 1 ½ cup
  • Baking pwdr – 1 tsp
  • Baking soda – ½ tsp
  • Sugar – ¾ cup + 2 tbsp
  • Beaten curd – 1/3 cup
  • Milk – 1 cup
  • Butter – ¼ cup
  • Vanilla essence – 1 tsp

PREPARATION .

  1. Sieve the maida + baking pwdr + baking soda twice ,transfer to a mixing bowl and keep aside .
  2. Grease the baking tin .
  3. Preheat the oven at 180 *
  4. Heat the milk till the butter melts – no need to boil .

METHOD

Take the sugar in a mixie jar and blend till powder .

Now add curd  + essence and blend well.

Now add the milk mixture and blend well – **** Be careful as the milk is hot , else mix both separately in a bowl.

Add this wet mixture into theflour slowly – keep mixing so that no lumpsareformed .

The batter should be of pouring consistency . [if very thick ,you can add little milk ]

Pour the batter in the baking tin and gently tap it twice.

Bake it for 35 – 40 mins till the tooth pick inserted in the centre comes out clean .

****here this narrow tin takes more time for baking ,else if you take awide tin  – it will be done in 25 – 30 mins

As my tin was narrow and small , it took 40 mins for baking .

Allow it to cool for 10 mins or more.

Run a knife around the tin.

Carefully remove the cake .

Again let it cool before slicing .

Hot milk cake is ready to serve.

How to make hot milk cake

NOTES

  1. Once again ,would remind you if mixing in a mixie jar be careful after pouring the hot milk as it can splash .You can mix it separately.There is no need to boil the milk- once the milk becomes warm the butter melts.
  2. You can add any essence and food colour .
  3. Use a wide tin to reduce baking time.
