Ghee rice recipe

                                                                    GHEE RICE / NEI CHORU RECIPE

Ghee rice /Nei choru

INGREDIENTS

  • Biriyani rice – 1 cup. [ I used Kerala kaima rice]
  • Thinly sliced onion – 1small
  • Ghee – 2 Tablespoons
  • Cinnamon – 2 half inch sticks
  • Cardamom – 3 Nos
  • Cloves – 6 Nos
  • Bay leaf – 1 Nos
  • Hot Water – 2 cups
  • Salt as required
  • Fried dry fruits and fried onions for garnishing.

METHOD

Soak the rice in water for about 30 minute, drain and keep aside.

Heat ghee in a pan and fry the cinnamon, cardamom, cloves, and bayleaf .

Add thinly sliced onion and saute till translucent.

Add the drained rice and fry for 3 – 4 minutes.

Add the hot water, salt and cover and cook until the rice is done.

Garnish with fried badam , cashews, raisins and fried onion.

Goes well with mutton and chicken gravy and dal.

Note

  1. You can also add ginger garlic paste.
  2. You can use cooked rice.
  3. You can avoid onion.
  4. if the rice is nt cooked ,you can sprinkle few tbsp of water and put it on dum.
  5. For some rice the ratio is 1 : 2 ,for some rice it can be 1 : 2 1/4
