Homemade strawberry ice cream

HOMEMADE STRAWBERRY ICECREAM

INGREDIENTS

  • Strawberry puree – 1 cup
  • Whip cream – 1/2 cup [ I used tropolite ]
  • Milk 1/2 cup
  • Sugar / condensed milk / strawberry crush or syrup – 1/2 cup or 3/4 cup as per sweetness required [ depends on the sweetness of fruit also ]
  • Few drops of strawberry essence and red colour if required to enhance the colour and flavour [ optional – I did not add ]
  • Ice cream beater

PREPARATION

  1. Wash the strawberries, trim off the leaf part ,hull it and chop it roughly.
  2. ***To hull the strawberry pass a thick strong straw from the bottom of the strawberry to discard the core with the leaf .
  3. Blend it  to a fine puree without adding water . [ no lumps – if you want smooth ice cream without seeds – strain it through soup strainer ]

METHOD

Take the whip cream in a mixing bowl and start beating .

Beat it for 2 minutes till soft peaks are formed  .

Now add milk and beat for a minute .

Add straw berry puree and mix  .

For sweetness I added hersheys strawberry sauce instead of condensed milk or sugar .

Beat well so that ingredients blend well.

Pour it in a freezer safe container and freeze it for more than 6 – 8 hours or overnight.

****If you want you can beat it again after 4 hrs to avoid crystallization [ it is optional ].

Once frozen, scoop and serve in a bowl or cone.[ keep outside for few seconds for easy scooping ]

Drizzle strawberry crush /  sauce / syrup and garnish with strawberry bits while serving .

VARIATION – Instead of adding strawberry puree directly – cook the puree + sugar till the sugar melts completely – this way you can avoid any crystallization.
