FRIED IDLI RECIPE

INGREDIENTS

  • Leftover idlis – 4
  • Molgapodi as required
  • Oil to deep fry

PREPARATION

Refrigerate the leftover idlis . Min 1 hr or overnight .[ To avoid too much absorption of oil in deep fried version, make sure to refrigerate it. ]

Make molgapodi using this recipe -Molgapodi

METHOD

Chop the refrigerted ildli into wedges /fingers as shown in the images .

Heat oil in a pan , once the oil is hot .Slide in the idlis .

Oil should be really hot while dropping the idli wedges.

Allow it to fry , don’t stir else the idlis will stick to the ladle .

Stir once the bubbles reduces .

Flip and fry all over till golden brown and crisp on medium flame . [ it takes time to fry ]

Drain on absorbent paper .

Serve hot with ketchup or any dips  . It stays crisp even after cooled down.

VARIATION

Once it is fried sprinkle the molgapodi and mix well till it is coated on all sides .

One more version to enjoi these crispy idlis is . Plate them on a plate. drizzle sugar syrup or honey all over as required and top it with icecream . Tastes heavenly with butter scotch ice cream .

OVEN VERSION –

  • Preheat oven to 190 oC. . Sprinkle oil generously all over the idlis to coat it evenly.
  • Arrange it in a baking tray and bake it for 10 – 12 minutes. Take it out and turn over the idlis.
  • Bake again for 10-12 minutes or until golden in colour.
  • Transfer to a bowl and toss it with idli podi or any masalas like chaat masala / pav bhaji masala as needed while it is hot. .

NOTES

  1. Instead of deep frying you can bake [ @190m * in preheated oven for 10 – 12 mins ]
  2. You can also tawa fry the idlis.
  3. Using a day old idli works best.
  4. With these fried idlis you can try many recipes like idli manchurian , idli chaat , idli shahi tukda etc
  5. Instead of molgapodi ,you can sprinkle chaat masala or pav bhaji masala or chilli pwdr .
  6. Ideally, the fried idli pieces should be crisp from outside and soft from inside. You can also pan fry or shallow fry them.
  7. While deep frying take care to fry the smaller pieces in a batch then bigger pieces in another batch.
  8. If your idlis absorb oil , try dusting it with little corn flour .
