   INSTANT MANGO PICKLE     / NURUKKU MANGO ACHAR /INSTANT KERALA STYLE INSTANT MANGO PICKLE

Instant mango pickle recipe

INGREDIENTS

  • Raw Mango – 250gms (1 med-big size)
  • Turmeric powder – 1/2 tsp
  • Chilli powder – 1 OR 2 tbsp OR  as per taste
  • Fenugreek seeds – 1/2 tsp
  • Asafoetida – 1tsp
  • Curry leaves – 1 or 2 sprig
  • Mustard seeds – 1tsp
  • Sesame oil or regular oil  – 2 or  3 tbsp or as required
  • Salt as per taste
Instant mango pickle

METHOD

Peel the mango and chop it into fine cubes. It’s ok if u don’t peel.

Now add the chilli pwdr, turmeric pwdr, salt and asafoetida.

You can keep it for sometimes if you have time Or we can immediately temper it or even serve it without tempering .

Now take a pan add oil then add the mustard seeds and let it splutter

Follow by adding fenugreek seeds and curry leaves.

Add the marinated mango to it.

If u want the crunchyness of the mango off the stove don’t over cook it or cook it for few minutes to make it soft  .

You can also add little sugar.

Mango pickle is ready serve as side dish .
