Instant sambar

INGREDIENTS

  • Fried gram / phutana / chutney dal /daria – 3 tbsp.
  • Onion chopped – 1
  • Tomato chopped – 2 small
  • Sambar pwdr – 1 ½ tbsp
  • Asafoetida – a generous pinch
  • Jaggery – ½ tsp or as required
  • Oil- 1 ½ tsp
  • Salt to taste
  • Oil – 1 or 1 ½ tsp for tempering
  • Mustard seeds + urad dal – 1 tsp
  • Curry leaves – few
  • Ghee – 1 or 2 tsp
  • Finely chopped coriander leaves for garnish

METHOD

Heat 1 ½   tsp oil in a pan ,add onions and fry till transparent .

Add tomato + salt and fry till soft .

Add fried gram dal and stir fry for 1 min .

Add sambar pwdr + asfoetida and mix well.

Off the flame and allow to cool .

Transfer to mixie jar and grind to smooth paste by adding ½ cup water .

Add jaggery + 2 ½  cup water and blend well.Keep aside .

Heat 2 tsp oil in a pan ,add mustard seeds + urad dal and let it crackle .

Add curry leaves.

Add the ground mixture and mix well .

Adjust salt if required and water if required .

Allow it to boil for a minute.

Add ghee and mix well .

Garnish with coriander leaves and off the flame .

Serve as accompaniment for SouthIndian dishes .

NOTES

  1. The sambar thickens on cooling .
  2. I added 3 cup of water , still it was thick . So adjust water accordingly.
  3. Some make this recipe with besan also .
  4. U can add boiled veges.
  5. U can reduce a tomato and add tamarind .
  6. Sambar pwdr quantity has to be, as to how strong you want the flavor to be.
  7. Taste will differ from regular sambar.
