Jackfruit payasam /kheer

JACKFRUIT PAYASAM  / JACKFRUIT JAGGERY KHEER / FANAS PAYASAM / JACKFRUIT PRADHAMAM

Jackfruit is quite healthy. It provides a moderate amount of calories in addition to lots of fiber, vitamins, minerals and antioxidants.

Jackfruit also contains folate, niacin , riboflavin , potassium, and magnesium.

Being high in fibre, it aids in digestion. Its mucilagenous pulp has been found to be useful in boosting the immune system.

INGREDIENTS

  • Ripen Jackfruit – 12 nos
  • Grated jaggery – 3/4 cup or as per taste
  • Coconut milk – 1 1/2 or 2 cup
  • Cashew broken – 2 or 3 tbsp
  • Ghee – 1 tbsp
  • Cardamom pwdr – 1/8 tsp [generous pinch ]

PREPARATION

  1. Deseed the jackfruits and chop it roughly .
  2. Finely chop 1 piece of jackfruit separately and keep it .[for garnish – optional ]
  3. Heat 1 tbsp ghee in a cooker ,add the cashews and fry it till golden .
  4. Remove and keep aside .
  5. Now add the finely chopped jackfruit ,fry it for few seconds and remove it.[ for garnish ]
  6. Now add rest of the jackfruits ,stir fry for a minute .
  7. Add 1/2 cup of water and pressure cook upto 2 whistles or till soft .
  8. Allow the pressure to release.
  9. Grind / blend the cooked jackfruit into fine puree and keep aside .

METHOD

Take the jaggery + 1/2 cup water and cook it till the jaggery melts .

Strain the jaggery and take it in the same pan.

Keep it on medium flame .

Add the jackfruit puree and mix well .

Cook for a minute .

Lower the flame and add the coconut milk + fried cashew + cardamom pwdr  + fried jackfruit pieces and mix well .

Off the flame ,we don’t have to boil .

***be careful  if you boil , it can curdle.

Jackfruit payasam full of flavour is ready to serve either hot cold  ,the aroma is heavenly .

NOTES

  1. Use ripen yellow jackfruit .
  2. Adjust jaggery quantity according to the sweetness of the fruit and as per your taste .
  3. You can add coconut milk according to the consistency ,you want – thick or thin .
  4. Instead of coconut milk we can use dairy milk .
  5. You can also use half of coconut milk + dairy milk.
  6. If the payasam is thick add more milk.
  7. I loved the flavour of jackfruit so did not add cardamom.
  8. You can also add fried coconut bits for garnishing together with the cashew .
  9. Instead of jaggery we can make with sugar / condensed milk.
  10. I pureed the jackfruit so that kids don’t make fuss while having .
  11. With cashews you can also add fried raisins.
  12. Instead of cardamom pwdr ,y not try nutmeg pwdr .
  13. A pinch of dry ginger pwdr adds more flavour.
