Khaju aur imli ki chutney


  • Seedless dates  [ khajur] -1 cup
  • Seedless tamarind – 2 or 3 tbsp
  • Grated jaggery – 1/4 cup or as per taste [optional if the dates are sweet ]
  • Roasted jeera pwdr – 1/2 tsp
  • Red chilli pwdr –  1/4 tsp
  • Black salt – as per taste [optional ]


Pressure cook dates + jaggery  and tamarind upto 3 or 4 whistles .

Allow it to cool.

Blend / grind to a smooth paste by adding water .

Strain it through a soup strainer.[strainer with  big holes]

Again cook the strained mixture on low flame for 5 minutes by adding the jeera powder, chilli pwdr and salt.

The texture and colour changes.

Remove from flame.

Allow it to cool and store it in a airtight container.


  1. You can add masalas of your choice like garam masala pwdr, dried ginger[soonth] pwdr.
  2. You can pan cook or microwave the dates ,jaggery and tamarind.
  3. Instead of dates you can use kismis [raisins]
  4. You can temper it with fennel seeds [saunf], coriander seeds or nigella seeds [kalonji],cardamom pwdr etc.
  5. Adjust sweetness, sourness as per your taste by increasing or decreasing the quantity of tamarind and dates and jaggery.
  6. After cooling the chutney thickens, you can dilute it with warm water.
  7. Instead of salt use chaat masala.
  8. Instead of dates you can just use tamarind and jaggery.
