Ladi pav recipe

                                                                                                                 LADI PAV RECIPE

INGREDIENTS

  • 100 ml – Warm milk / water
  • 1 tsp – active dry Yeast
  • ½ tbsp – sugar
  • 1 cup – maida
  • Salt – 1/4 tsp
  • Butter or oil – 2 tsp
  • Little milk + butter for brushing
  • Extra maida flour for dusting

METHOD

Mix sugar + yeast + warm milk and keep aside for 10-15 mins to rise.

In plate take the flour + salt + butter or oil and mix well.

Now add the frothy yeast mixture to the flour and knead it well  into a soft and sticky dough. Dont worry if it is sticky  as it has to be sticky.

You can add little more milk if it is not soft.

Rub little oil on this sticky dough and place it in a bowl.

Cover it with a damp cloth as shown in the pic.

Keep it aside for 2 hrs till it doubles up .

After 2 hrs sprinkle flour on the kitchen platform or flat surface remove the dough on it .

Punch and knead the dough very well.

Make the dough into a long even cylinder as shown in pic

Divide it  into equal portions.

Again take each portion roll it ,flatten it with your palms and fingers.

Make small balls as shown in the pic.

Place these dough balls in a greased and dusted tin.

Again cover this and keep it aside for 40 minutes /1 hr.

Preheat the oven at 200 [convection mode].

After 40 mins when the balls have risen well.[when you poke your fingers the dough should spring back]

Brush the top part with milk.

Place it in the oven and bake it for 20 – 25 mins till they are evenly browned from top.

Once ready remove out and brush butter.

Again cover it with a damp cloth 15-20mins.

Use a knife and loosen the pav and remove it.

Soft pav is ready.

NOTE

  1. You can also bake it in cooker or heavy bottom pan.refer here for detailed cooker baking. Timing will be same. Flame has to be low .

  3. You can give any shape.
  4. Use a Rectangular tin.
  5. The height of the tin has to be more than 2 inch.
  6. While brushing the pav with milk you can add little sugar for better browning.Don’t add more sugar or it can burn.
  7. You can take a combo of wheat flour + maida.
  8. If the dough is sticky you can add extra flour.
  9. For burger buns flatten the dough balls and sprinkle sesame on it.
  10. Bake the pav on the  middle rack.
  11. Preheat the oven for 10mins – 15 mins.
  12. The process where we allow the dough to rise is called proofing.
