           LADIES FINGER STIR FRY [ South Indian style ]

INGREDIENTS

  • Ladies finger – 250 gms
  • Onion finely chopped – 1 big
  • Green chilli chopped – 3 or as per taste
  • Oil – 2 tbsp
  • Mustard seeds – 1 tsp
  • Curry leaves – few
  • Turmeric pwdr – ¼ tsp [ optional ]
  • Coconut freshly grated – 3 tbsp
  • Salt as per taste

PREPARATION

Method clean ,wash and pat dry the ladies finger and chop into desired size.

METHOD

Heat oil in a pan ,add mustard seeds and let it splutter.

Add onions + curry leaves + green chilli and fry till translucent.

Add ladies finger and stir fry on medium flame for few minutes.

The ladies finger will become sticky , continue stirring .

Fry till the ladies finger shrink , become soft + non sticky.

Add salt and turmeric pwdr mix well.

Once done , add the coconut and mix well and off the flame .

Serve as side dish for chapatti or rice.

NOTES.

  1. Don’t chop the ladies finger finely or it will become very sticky while cooking.
  2. I have added more oil you can reduce it .
  3. You can drizzle few drops of lemon juice towards the end.
  4. Give a twist by adding 1 tsp sambar pwdr.
  5. I have not added turmeric pwdr.
  6. Buy tender ladies finger.
  7. It takes around 15 – 20 mins to cook.
  8. There should be no moisture in the ladies finger while cooking.
  9. Heard somewhere to microwave it to avoid stickiness ,but not tried.
  10. Also adding a tsp of lemon juice or curd helps in reduce the stickiness.
