Masala mathri

MASALA MATHRI

INGREDIENTS

  • Maida – 1 cup
  • Wheat flour – 1 cup
  • Ajwain – ½ tsp
  • Salt to taste
  • Warm water to knead
  • Red chilli pwdr – 1 tbsp
  • Melted ghee – 4 or 5 tbsp
  • Oil to deep fry

PREPARATION

  1. Sieve both the flours together .
  2. Make a mixture of ghee and chilli pwdr .

METHOD

Take maida + wheat flour + ajwain + salt in a big plate and mix well with clean hands.

Now slowly add warm water and knead it into a thick and tight dough .

Cover it and Allow it to rest for 15 mins or more  .

Divide the dough into big balls .

Roll the ball into a chapatti ,apply the chilli pwdr paste all over as shown in the image.

Now roll it into a thick cylindrical log .

Divide and cut the log into equal parts.[ picture for reference ]

Flatten each portion and roll it into small thick discs .

Make holes all over with a fork .

Heat oil in a kadai .

Slowly slide in the mathris and fry it evenly on both sides low flame till golden and crisp .[ it takes time to cook as it is thick ]

Fry in small batches ,don’t over crowd the pan – few at a time.

Once done ,remove on absorbent paper .

Allow it to cool and store it in an air tight container.

Serve it as snack .

NOTES

  1. There are many variation to this recipe.
  2. Instead of chilli pwdr ,you can use oregano / mixed herbs .
  3. V can add different spices in the flour like kasoori methi / black pepper pwdr / jeera / hing / chaat masala / garam masala etc etc .
  4. Also you can make plain ones with just ajwain.
  5. Instead of applying the chilli paste and rolling ,we can just add the chilli pwdr in the flour and make it .
