Methi POORi recipe

 METHI POORI

                                                                          INGREDIENTS

  • 1/2 bunch of methi leaves  – destem , soak, wash,strain excess water and pat dry.
  • 1 1/2  cups of maida.
  • 1 1/2  cup of wheat flour.
  • 2 tsp sooji / rava
  • 1 tbsp besan [ optional ] .
  • 1/4 tsp turmeric pwdr.
  • 2  tbsp curd.
  • 1/2  tsp chilli pwdr .
  • 1/4  tsp chaat masala pwdr .
  • 1/4   tsp Kasoori methi pwdr to enhance the flavor.
  • Salt as per taste.
  • Oil – 1 tsp
  • Oil for deep fry

*** We can only make of wheat flour, but pooris made of only wheat flour absorbs  lot of oil .So i have taken half of each.

PREPARATION 

Heat 1 tsp oil in a pan.
Add the methi leaves and fry till all the water evaporates .
Now add very little salt, turmeric pwdr, chilli pwdr, chaat masala.
(You can add any masala of your choice like garam masala  ,jeera pwdr  etc)

METHOD

Mix all the three flour + rava .

Add  salt , the fried methi mixture , curd, kasoori methi pwdr and mix well with clean hands .

add little water and knead it into a soft dough.

Cover and keep it for sometime.

Divide the dough into equal portions. [small size ]

Roll each portion into small smooth balls.

Roll each ball with a rolling pin into  small puris . [ it should not be very thin but thick like baturas ]

Deep fry it on both the sides,press it with ladle so that it puffs up .

Drain and remove on absorbent paper .

Serve it hot with aloo ki sabji , paneer etc.

NOTE

  1. Instead  of adding the methi raw I fried it as the taste gets enhanced  more.
  2. If you dont have fresh methi , just use dry kasoori methi .
Bengali cholar dal recipe

Recipe for instant paneer ki sabji  –

Make a puree of onion, tomato and ginger garlic .
In a pan take oil.
Add  few whole garam masala.
Add puree , cook till oil separates.
Add chilli pwdr, turmeric pwdr ,coriander pwdr, garam masala , pinch of sugar and salt .
Once done add beaten curd.
Add the paneer and cook till the consistency of ur choice.
No need to fry the paneer . Add fresh  paneer
Garnish with fresh coriander leaves. Here I did not add kasoori methi pwdr, as I served it with methi  puri , otherwise u can  sprinkle little kasoori methi pwdr also towards the end.
