Pasta in Indian style

                                                          PASTA IN INDIAN STYLE / MASALA PASTA

INGREDIENTS 

  • Pasta – 1 cup
  • Onion – 1 finely chopped
  • Tomatoes  – 1
  • Garlic – 3 cloves
  • Olive Oil – 1 tbsp
  • Chilli pwdr – 1 tsp
  • Coriander pwdr – 1 tsp
  • Turmeric pwdr – 1/4 tsp
  • Garam masala – 1/4 tsp OR KITCHEN KING MASALA – 1/2 TSP
  • Water – 1 cup [or even stock will do]
  • Salt as per taste
  • Tomato ketchup – 2 tsp
  • Sugar – 1/4 tsp
  • Finely chopped coriander leaves for garnish

PREPARATION

Cook the pasta in salted water, drain and keep it aside OR  cook pasta simultaneously so that you can drain the pasta and add it immediately into the sauce.

Make a puree of tomato + garlic. [you can blanch{ boil for 1 minutes} the tomato ,peel the skin and then puree it]

METHOD

Heat oil in a pan ,add the onions and saute till translucent.

Add the tomato puree and fry till oil separates.

Add chilli pwdr + turmeric + coriander pwdr + garam masala pwdr + salt and fry till raw smell leaves.

Add the water  and let it boil.

Once it starts boiling ,add the cooked pasta and toss well.

Simmer and cook for 2 minutes till the pasta gets completely coated with the masala and water evaporates.

Add the ketchup + sugar and give a stir.

Off the flame and garnish with coriander leaves.

NOTES

  1. Use olive oil.
  2. You can add 1 tsp butter also.
  3. Add little pepper pwdr,chat masala or even herbs or any masala of your choice.
  4. Instead of plain water ,add stock made from 1 magic cube.
  5. You can add veges.
  6. You can use any type of pasta – spiral , fusli , spaghetti, farfalle
  7. Same recipe you can try with macaroni.
