Pasta in roasted red bell pepper sauce

PASTA IN ROASTED RED BELL PEPPER SAUCE

INGREDIENTS

  • Pasta – 1 cup
  • Tomato – 1 big
  • Red bell pepper – 1
  • Garlic – 3
  • Oregano or mixed herbs – ¼ tsp
  • Chilli flakes – 1 tsp
  • Salt as per taste
  • Veg or chicken stock or plain water – ¾ cup [use maggi cubes]
  • Olive oil – ½ tbsp.
  • Tomato ketchup – 1 tbsp
  • Cheese grated for garnishing

PREPARATION

  1. Boil enough water to cook the pasta. Cook the pasta with salt till done. Drain the water and keep aside.
  2. Roast the bell pepper directly over the flame, till it is charred from all sides. Cover and keep aside for 5-10 minutes to allow it to sweat and cool down. Peel the black skin with hands or scrape it off with a knife.
  3. Saute the tomato and garlic in olive oil till soft .
  4. Grind the roasted bell pepper + fried tomato + garlic + ketchup into a fine paste.

METHOD

Take the paste in a pan + ¾  cup water or stock and allow it to boil for 2-3 minutes.

Add chilli flakes + oregano + salt and mix well.

Add the cooked pasta to it and mix well.

Simmer on low flame for 1 min.

Off the flame when the sauce thickens and pasta is well coated with the masala

Serve hot by garnishing with grated cheese.

NOTES

  1. While frying the tomato you can add few cashew also .
  2. You can also add fresh cream to the sauce.
  3. You can use any pasta.
  4. You can add any veges like corn, broccoli, mushroom etc
