Pav stuffed with lip-smacking potato mixture, dipped in gram flour batter and deep fried to make one of its kinds of pakoda.Pav ke Pakode is a different and unique recipe where pakoras are made from Indian bread – Pav

INGREDIENTS FOR THE STUFFING

  • Potato – 4 big
  • Oil – 2 tsp + oil for deep frying
  • Garlic + green chilli paste – 2 tbsp or as per taste
  • Turmeric pwdr – 1/2 tsp
  • Asafoetida – a generous pinch
  • Finely chopped coriander leaves – ½ cup
  • Salt as per taste

PREPARATION

Pressure cook the potatoes till well cooked , peel and mash it till a smooth texture without any lumps.

METHOD FOR MAKING THE STUFFING

Heat 2 tsp oil in a pan .

Add the garlic + chilli paste and fry till raw smell leaves.

Lower the flame.

Add turmeric pwdr + asafoetida + coriander leaves ,fry till the leaves shrink.

Add the salt + mashed potatoes and mix well till the potatoes get mixed with the masalas .

Off the flame and allow it to cool .

Once cooled divide it into equal portions . [At this stage you can keep the balls in fridge for sometime if time permits]

INGREDIENTS FOR THE COATING

  • Besan /gram flour – 2 cups sifted
  • Turmeric pwdr – 1/2 tsp
  • Chilli pwdr – ½ tsp
  • Chaat masala pwdr – ¼ tsp
  • Cooking soda – ½ tsp[optional]
  • Salt as per taste

METHOD

Mix all the ingredients under coating in a deep bowl add water little by little and make a smooth thick  batter without any lumps.

METHOD TO MAKE THE PAKORAS

Slit the pav and fill in the stuffing .

Heat oil in a deep kadai or pan .

Once the oil becomes hot, take each stuffed pav and  dip it in the besan batter till it gets coated on all sides .

Carefully  drop it in the hot oil.

Turn and fry it on all sides till golden colour.

Remove it on absorbent paper .

Repeat the process with all the stuffed pavs.

INGREDIENTS TO ASSEMBLE

HOW TO SERVE

  1. Take a pav pakora and cut it into 6 pieces.
  2. Drizzle the sweet and green chutney over it.
  3. Sprinkle finely vada pav chutney pwdr + chopped onions + chaat masala + coriander leaves + fine sev.
  4. Serve it as a chaat.

NOTES

  1. Instead of pav you can use bread.
  2. you can also apply both the chutney on each side of the pav before stuffing it.
  3. Instead of using the whole pav cut it into 4 pieces then stuff ,coat and fry.
  4. *Potato should not be wetty but of smooth texture without lumps.
  5. While frying the pakoras be careful ,it should not change its colour much.
  6. While tempering the potato you can also add mustard seeds, curry leaves, urad dal or lemon juice.
  7. Use enough oil to deep fry so that the pakoras don’t touch the bottom of the pan and get burnt.
