Perfect home made crispy french fries

PERFECT HOME MADE CRISPY FRENCH FRIES

INGREDIENTS

  • Large potatoes ablong shaped – 3 or 4
  • Salt – 1 tsp
  • Oil for deep frying
  • Dips or sauces to serve
  • A bowl of chilled /cold water

PREPARATION

  1. Wash and wipe the potatoes .
  2. First cut little round  portion from the top ,bottom and sides – to get a rectangular shape .
  3. Slice the potatoes , further slice it into 1/2 inch fingers as shown in pics /video .
  4. After slicing put the fingers in the cold water bowl immediately to avoid discolouration .
  5. Soak it in cold water for  10 mins .
  6. Wash and rinse the potato in 3 to 4 water – to remove the excess starch .
  7. Boil enough water + 1 tsp salt in a pan .
  8. Add the potato and cook for 2 minutes after the first boil .
  9. Drain and remove the potato .
  10. Pat dry it completely with a kitchen napkin – there should be no moisture .

*****You can dry it and store it in zip lock in the freezer and use it when required .

 

METHOD 1

Leave it open for few mins to cool .

Heat oil in a deep pan.

Once the oil is hot , slide in the potato fingers and fry it till crisp and light golden in colour .

Drain and remove on absorbent paper .

Sprinkle little salt and mix well.

Serve hot with any dips / sauces .

METHOD – 2

After pat drying the cooked potatoes .

Fry the potato for 2 – 3 minutes in hot oil .

Drain and remove on an absorbent paper .

Let it cool for 10 mins .

*****You can dry it and store it in zip lock in the freezer and use it when required .

After 10 min again fry it in hot oil till crisp and light golden in colour .

Drain and remove on absorbent paper .

Sprinkle little salt and mix well.

Serve hot with any dips / sauces .

 

METHOD 3

After pat drying the cooked  potatoes ,sprinkle corn flour all over and mix well.

Deep fry it in hot oil till crisp and light golden in colour.

Drain and remove on absorbent paper .

Sprinkle little salt and mix well.

Serve hot with any dips / sauces .

VARIATION  – THE J FRIES [ google it ]

Nowadays the fries are served differently – layer the fries on a plate .

Drizzle lot of dips of different flavour dips / mayo  /cheese sauce / BBQ sauce /mustard sauce/ ketchup over it and serve as shown in the pic.

We can also add stir fried veges /sausages /salami / tikkas /tandooris / paneer  over

For sweet version – they drizzle chocolate sauce /nuts / tutti Frutti / choco chips / Nutella /scoop off ice  cream

NOTES

  1. We can also bake the fries 25 – 30 mins at 200 *c in preheated oven .
  2. After frying we can sprinkle chilli flakes / mixed herbs / oregano /pepper pwdr / chaat masala
  3. Fry in small batches ..
  4. Buy red coloured potatoes with mud.[ russet potatoes ]
  5. After par boiling the potatoes for 2 mins ,you can dry it and store it in zip lock in the freezer and use it when required .
  6. Be careful while frying .
