                                                 PHIRNI / RICE PUDDING

INGREDIENTS

  • Basmati rice – 2 ½ tbsp
  • Full cream Milk – ½ litre
  • Sugar – 3 or 4 tbsp or as per taste [ instead of sugar you can use condensed milk ]
  • Cardamom pwdr – ¼ tsp
  • Rose water 2 tsp OR rose essence few drops

PREPARATION

Clean , wash , rinse and soak the rice for 20 – 30 mins.

Drain the excess water and grind it to coarse consistency like rawa  . [ no need to add water while grinding but if required add 1 tbsp of water ]

METHOD

Bring the milk to a boil in a heavy bottom pan.

Once the milk starts boiling ,lower the flame and add the rice paste .

Mix well  and cook for 10 mins by stirring in between.

After 10 minutes check if the rice is cooked [soft ] , add sugar + cardamom pwdr .

Stir and cook for 2 more minutes till the phirni thickens.

Off the flame , add the rose water and mix well.

Pour in serving bowls.

Refrigerate for minimum 1 hr and serve chilled.

NOTES

  1. You can add condensed milk also ,then you have to reduce the sugar.
  2. It has to be served in small earthern bowls.
  3. I like the above plain version where you get the essence of rose . But you can also add few saffron strands soaked in milk.
  4. You can also add soaked , peeled and sliced almonds or pista .
  5. You can garnish with saffron or rose petals
  6. You can give a variation by adding 2 tbsp of rose syrup to get rose phirni .
  7. Add  ¼  cup of thick mango puree and mix it ,when the phirni has cooled- mango phirni is ready .You can also add few mango pieces to it.
