INGREDIENTS

  • Besan /gram flour – 1 cup
  • Rice flour – 6 tbsp
  • Hot oil – 2 tsp
  • Ajwain -1 tsp
  • Butter – 1 tbsp [room temperature]
  • Salt to taste
  • Oil to deep fry

PREPARATION

Soak the ajwain in water for 1 hr. Grind it by adding ¼ cup water. Strain and keep aside

OR

Dry roast the ajwain till aromatic .[don’t burn ]first grind it into powder , then add ¼ cup water and grind it .Filter the water and keep aside .

METHOD

Sieve the besan  + rice flour , add butter + hot oil + ajwain water + salt and mix well.

Gradually add water and start kneading it into a soft tight dough.

Heat the oil .

Fill the chakli press with fine hole mould.

Press the sev in a big circular movement in the hot oil .[ don’t overlap ]

Flip and fry on medium flame .[colour should not change much, don’t burn it or over fry it ]

Fry till the frying bubbling sound [shshshshshs] stops. { doesn’t take much time to get fried as it if fine }

Remove on an absorbent paper.

Once it cools , store it in air tight container.

Serve as snacks .

 NOTES

  1. Adding rice flour ,makes it crispy and crunchy.
  2. If oil or water increases in the dough, adjust by adding flour.
  3. I have used mould with fine holes.
  4. If you are doubling the quantity, then knead the flour in batches, instead of kneading the whole flour at one time.
