Potato in coconut peanut masala

POTATO IN COCONUT PEANUT MASALA

INGREDIENTS

  • Potato  – 3 nos [ peel and chop into big pieces ]
  • Fresh coconut – 3 tbsp
  • Roasted skinless peanut – 2 tbsp
  • Onion – 1 small
  • Chilli pwdr – ¾ tsp
  • Turmeric – ¼ sp
  • Coriander pwdr – 1 ½ tsp
  • Garam masala – ½ tsp
  • Ginger garlic paste – 1 tsp
  • Amchur – ¼ tsp
  • Chaat masala – ¼ tsp
  • Tamarind – a small piece
  • Jaggery – a small piece
  • Oil – 1 tbsp
  • Jeera – 1 tsp
  • Curry leaves – few
  • Asafoetida – a generous pinch
  • Salt as per taste
  • Finely chopped coriander leaves for garnish

PREPARATION [MASALA ]

Dry roast the coconut in a pan till brown colour .

Add the peanuts and mix .

Add the onion and fry for a min. Add the ginger garlic paste.

Add the chilli pwdr + coriander pwdr + turmeric pwdr + garam masala + tamarind and jaggery.

Fry for a min. Allow it to cool.

Add the chaat masala + amchur pwdr + salt  and grind it to a paste.

METHOD

Heat oil in a cooker ,add jeera + curry leaves + asafoetida and fry .

Add the ground paste , mix well and stir fry  for a minute.

Add the potatoes and mix well .

Add required water as per the consistency ,you want .

Adjust salt if required .

Pressure cook upto 2 whistles .[ don’t overcook]

The potatoes should not become mushy .

Transfer to the serving bowl and garnish with coriander leaves .

NOTES

  1. Instead of amchur pwdr , u can add 1 tomato – after frying ginger garlic paste add the tomato and fry for 1 min .
  2. Don’t make the gravy thin .
