PUMPKIN SOUP

INGREDIENTS

  • Pumpkin cubes – 1 or 1 ½ cup [ peeled /deseeded ]
  • Cinnamon – small piece
  • Bayleaf – 1
  • Clove – 1
  • Garlic chopped – 1 tbsp
  • Onion – 1 small chopped
  • Pepper powder – as per taste
  • Butter – 2 tsp
  • Olive oil or regular oil – 1/4 tsp
  • Milk /water – ½ cup
  • Salt – as per taste
  • Amul fresh cream –for garnishing [ optional ]

METHOD

Heat butter + oil in cooker. add cinnamon + bayleaf + clove and mix well .

Immediately add onion and garlic and saute till light golden brown. [dont burn]

Add the pumpkin and give a nice mix .

Add 2 cup water + salt and pressure cook till soft .

Allow it to cool .

Blend / grind it to a fine sauce .[add water if required  as per the consistency you want]

Strain it.

Add milk / water and mix well. [ add as per the consistency you want ]

Transfer to a sauce pan and cook bring to a boil .

Keep stirring as it cooks .

Off the flame.

Serve hot .Sprinkle pepper pwdr as reqd .

Garnish with fresh cream and serve hot with garlic bread.

NOTE

  1. I also added 1/2 cheese cube .
  2. You can add 1/4 tsp sugar also .
  3. Adjust pepper pwdr as per taste.
