Rava kheer

                      SOOJI KHEER / SEMOLINA KHEER / RAVA KHEER

SOOJI KHEER / SEMOLINA KHEER / RAVA KHEER

INGREDIENTS

  • Rava – 2 tbsp [ not more than this ]
  • Milk – 2 cup
  • Water – ½ cup
  • Sugar – ¼   cup or as per taste
  • Cardamom pwdr– ¼ tsp
  • Ghee – 1 tbsp
  • Cashew + raisins – 2 tbsp

METHOD

Heat ghee in a pan and fry the cashew + raisins , remove and keep aside. [ don’t burn ]

In the same pan add rava and roast on low flame till aromatic for few mins .[ colour should not change ]

In another pan boil milk + water .

Once it starts boiling, lower the flame and add the roasted rava  and mix well.

Stir and cook for few mins.

Add sugar + cardamom pwdr and mix well.

Cook for 2 mins on low flame and off the flame.

Add the dry fruits and mix.

Serve hot or chilled.

NOTES

  1. You can also add edible camphor.
  2. You can adjust sugar and add condensed milk.
  3. Let the kheer be thin as it thickens when cooled.
  4. Instead of fried dry fruits you can add soaked , peeled and sliced almonds and pista .
  5. Y not add few strands of saffron
  6. Adjust water and milk as per the consistency ,you want.
