Roasted bell pepper salad

                                                                 ROASTED BELL PEPPER SALAD

INGREDIENTS

  • Yellow bell pepper – 1
  • Red bell pepper – 1
  • Onion – 1
  • Garlic – 2
  • Olive oil – 1 tbsp
  • Salt as per taste
  • Pepper pwdr as per taste
  • Lemon juice – 1 tbsp or as per taste
  • Finely chopped coriander leaves

PREPARATION

  1. Roast the bell pepper directly over the fire, till black blisters appear all over it.
  2. Remove from fire .Cover and keep for 5 – 10 mins to sweat , once cooled peel the blackened skin with hands or scrape off with a knife.
  3. Slice it into thin strips.

METHOD

Heat the oil in a pan .

Add onion + chopped garlic and fry till translucent.[don’t soften it more, it should be crunchy]

Off the flame.

Take all the ingredients in a bowl and mix well with clean hands.

Drizzle the lemon juice and mix well.

Refrigerate for minimum 2 hrs and serve.

NOTES

I have also added fried paneer  and boiled corn.
