Salt and pepper chicken [ Chinese ]

SALT AND PEPPER CHICKEN [ CHINESE ]

INGREDIENTS

  • Boneless chicken cubed – 250 gms
  • Soya sauce – 2 ½ tsp
  • Maida – ½ cup
  • Cornflour – 3 tbsp
  • Baking soda – a generous pinch or ½ tsp eno pwdr
  • Finely minced garlic – 1 tbsp
  • Pepper pwdr – 1 ½ tsp
  • Chilli flakes – ½ tsp
  • Green capsicum strips – ½ cup
  • Honey – 1 tbsp or little sugar
  • Olive oil + butter – 1 tbsp
  • Roasted white sesame seeds – 2 tsp for garnish
  • Finely chopped spring onion greens for garnish – 2 tbsp
  • Oil to deep fry

PREPARATION

  1. Clean ,wash and rinse the chicken .chop it into small cubes .Pat dry the chicken cubes with kitchen towel .
  2. Marinate the chicken with 1 tsp soya sauce + salt and keep aside for sometime.
  3. Make a batter of maida + cornflour + salt + 1 tsp pepper pwdr + baking pwdr.
  4. ***** Keep all the ingredients ready before u start .

METHOD

Add the marinated chicken into the batter.

Heat oil in a deep pan .

Take each chicken piece at a time ,coat it well with the batter and slide it into the hot oil.

Fry in batches , don’t overcrowd the pan .

Stir and fry till it is cooked , golden brown and crisp .

Remove on an absorbent paper and keep aside.

Heat 1 tbsp olive oil + butter  in a pan

Add the minced garlic and stir fry .[colour should not change ]

Add capsicum and stir fry.[it should have the crunch ,don’t over cook ]

Add chilli flakes + pepper pwdr + salt + soya sauce + honey /sugar + 1 tbsp water .

Mix well .

Add the batter fried chicken and mix well ,till it is coated from all sides .

Off the flame and garnish with spring onion greens.

Serve hot as a starter , infact you can also stuff it in bread or chapatti and relish it .

NOTES

  1. You can also add spring onions before adding the capsicum.
  2. You can red or yellow capsicum to add more colour to the dish.
  3. Same recipe can be tried with Manchurian balls /paneer / prawns .
  4. Instead of honey we can sugar.
  5. While making the batter instead of using baking soda ,u can use soda water to make the batter.
  6. You can also add green chilli to increase the hotness.
