SPICY CHETTINAD MUSHROOM MASALA

                                                   SPICY CHETTINAD MUSHROOM MASALA

INGREDIENTS

  • Button Mushroom chopped – 2 cup
  • Onion finely chopped – 1 big
  • Tomato finely chopped – 1 big
  • Oil – 1 tbsp
  • Curry leaves – few
  • Red chilli pwdr – 1 tsp or as per taste [ we are also adding peppercorns and whole red chilli ]
  • Garam masala pwdr – 1/2  tsp
  • Turmeric pwdr – ¼ tsp
  • Freshly grated coconut – 1 ½ tbsp
  • Coriander seeds – 2 tsp
  • Saunf / fennel seeds – 1 tsp
  • Pepper corns – 1/4 tsp
  • Whole Red chilly – 1 or 2 [ adjust accordingly ]
  • Salt to taste
  • Finely chopped coriander leaves for garnish

PREPARATION

1  –  Dry roast the coconut + saunf + peppercorns + red chilli + coriander seeds till golden brown. [don’t burn it ] Off the flame and add the chilli pwdr + garam masala pwdr + turmeric and mix well . Allow it to cool and grind it into a fine paste by adding little water.

2  –  Clean ,wash and rinse the mushroom to remove the impurities. Chop it into 2 or slice it into medium size. [while cooking it shrinks ,so don’t chop it finely ] Don’t have to discard the black part .Just trim the stem little.

METHOD

Heat oil in a pan ,add onion + curry leaves and fry till light brown.

Add tomatoes and fry till oil separates.

Add the mushroom and fry till it sweats and shrinks. [ 2 or 3 mins]

Add the coconut paste + salt and mix well.

Fry for few mins ,

Add water and mix well. [don’t make it very thin ]

Simmer on low flame for 1 or 2 minutes.

Garnish with coriander leaves and off the flame.

Ready to serve as a side dish.

NOTES

  1. Adjust masalas as per your taste.
  2. It has to be of little thick consistency, don’t make it watery .
  3. Y not garnish with little fresh cream.
  4. You can add crushed garlic also while frying the onions.
  5. Garnish with fried cashews.
  6. For cleaning the mushroom ,you can soak it in warm water for sometime.
  7. While buying buy white and firm mushrooms. If the outer covering is discoloured then try peeling it .
