   SPRING ONION SOUP

INGREDIENTS

  • Spring onion whites and greens finely chopped – 1 ½ cup
  • Garlic chopped – 1 tbsp
  • Butter + olive oil – ½ tbsp
  • Water / stock – 4 cup or more [use 1 maggie magic cube ]
  • Potato boiled and mashed – ¼ cup or 1 small
  • Pepper pwdr – to taste
  • Butter – ½ or 1 tbsp
  • Finely chopped coriander leaves or spring onion greens for garnish
  • Salt to taste

METHOD

Heat butter + oil in a pan ,add the onions and fry till translucent .

Add garlic and stir fry for few seconds .

Add spring onion greens and stir fry till it reduces / shrinks .

Adjust salt + pepper.

Add the stock / water and allow it to boil on medium flame for 5 minutes.

Add the mashed potato and mix well.

Off the flame .

Blend it in a mixer or food processor to a smooth mixture .[ you can strain it ]

Heat 1 tbsp of butter on medium flame,  add the strained mixture and mix well.

Check the flavour and adjust .

Once it starts boiling ,off the flame .

Garnish with finely chopped spring onion greens or coriander leaves .

Here if you want you can drizzle little fresh cream.

Serve hot with toasted garlic bread or bread stick .

NOTES

  1. I had less of spring onion whites , so I added regular onion sliced.
  2. Adjust pepper as per your taste .
  3. Adjust water as per the consistency you want.
  4. You can make veg stock at home or make it using magic cubes .
  5. Non – vegetarians can use chicken stock or chicken magic cubes will be more flavourable.
  6. Instead of olive oil u can use regular oil ,v add oil with butter so that butter doesn’t burn.
