                                                         STUFFED BUN / STUFFED BREAD

Stuffed bread

INGREDIENTS

  • Maida – 2 cup
  • Warm water – 3/4 cup roughly depending on the flour quality
  • Active dry yeast – 1tbsp
  • Sugar – 1 tbsp
  • Olive oil – 2 tbsp
  • Salt to taste

NOTE – I have used more yeast , as I will not keep the dough for proofing .

PREPARATION

METHOD

Take flour + yeast + salt in a bowl and mix well.

Now gradually add the warm water and start kneading the flour into a soft dough .

Knead it on a kitchen platform .

The dough will be sticky , but as we knead it will become soft and pliable.

while kneading if it sticks to the surface, scrape the dough and knead .

knead for atleast 4 mins.

Finally add the oil and knead for 1 min.

Divide the dough into 4 equal portions.

Roll each portion into soft balls .

Dough is ready to use .

NOTE – WE CAN USE ANY STUFFING – samosa stuffing / vada pav stuffing /any sabjis / paneer stuffing etc

INGREDIENTS FOR STUFFING

  • Oil – 1 tbsp
  • Paneer chopped into tiny cubes  or chicken boiled and shredded finely  – 1 cup
  • Onion sliced thinly – 1 or 2 big
  • Ginger garlic paste – 2 tsp
  • Soya sauce – 1 tsp
  • Chilli sauce – 2 tsp
  • Ketchup – 2 tbsp
  • Salt and pepper to taste
  • Finely chopped coriander or spring onion green for garnish

METHOD

Heat oil in a pan, add onion and fry till light brown.[don’t burn ]

Add ginger garlic paste and fry till raw smell leaves.

Add paneer or chicken and fry for few seconds.

Adjust salt and pepper.

Add soya sauce + chilli sauce + ketchup and mix well.

Fry for few seconds and off the flame.

Garnish with coriander leaves .

The stuffing should be thick not loose.

Keep aside to cool down.

METHOD FOR BRAIDED STUFFED BREAD

Take one part of the dough and roll it out into an oval of around 1/4 inch thickness.

Place one portion of the stuffing at the center of the oval .

Make cuts on the dough on both sides . Make sure there are equal number of cuts on both side.

To start braiding the bread, fold the bottom and top of the dough towards filling. Then fold each strip over the filling, overlapping them alternately.

Keep it covered for the rise for 45 minutes to 1 hour.

Make a mixture of 1/4 cup milk with 2 tsp sugar . This helps in giving a nice colour while baking .

Transfer the bread to a tray . Give a generous brushing of milk all over .

You can sprinkle sesame.

Preheat the oven at 200* degrees Celsius.

Place the tray in the oven and let bake for 20 – 25 minutes.

You will see a nice brown colour appearing on top of the Stuffed Braided Bread.

Brush with unsalted butter.

Cool on wire rack.

The time required for the bread to get done and the colour might vary based on the oven used.

Serve hot with any sauces of your choice.

Here i have stuffed vada pav stuffing and sprinkled vada pav chutney over it chutney

NOTES

  1. You can add any spice like finely minced garlic or pepper or chilli flakes while kneading the dough to give flavour to the bun.
  2. You can use any stuffing, like potato, mixed veg, mushroom or pizza toppings, cheese etc.
  3. Yeast has to be active and fresh or discard and use new one.
  4. I have used monaliz brand yeast. We also get blue bird brand .
  5. You can take half of wheat flour also.
  6. Y not stuff nutella or jam.
  7. While kneading the dough we can also add egg.
  8. I have used some left over fried chicken pieces for stuffing .
  9. The same dough can be used for making bread or pizza base or sweet bun.
  10. Below I have tried some other shapes also .Remember the thickness of the chappati you roll should be of ½ inch thickness or more only then will it be like bread or it will be crispy like papad.
