INGREDIENTS

  • Yam / suran – 200gms
  • Oil – 1 or 1 ½ tbsp
  • Fennel seeds – 1 tsp
  • Curry leaves
  • Chilli pwdr -1 tsp
  • Garam masala pwdr – ½ tsp
  • Coriander pwdr -2 tsp
  • Tamarind – a small piece [ optional ]
  • Garlic crushed – 2
  • Turmeric pwdr – ¼ tsp
  • Asafoetida
  • Curry leaves – few
  • Salt to taste

PREPARATION

  1. Remove the skin and slice  the yam thinly as shown in the pic. [you can rub little coconut oil while slicing yam ]
  2. Boil the yam with water + salt + turmeric + tamarind.
  3. Cook it till soft not mushy .[ dont over cook it]
  4. Drain the excess water and let it cool .

METHOD

Once the yam cools add the chilli pwdr + coriander pwdr + garam masala pwdr + asafoetida + little salt and mix well. Let it marinate for 10 mins.

Heat oil in a pan ,

Add the fennel seeds and fry for few seconds,

Add the crushed garlic and curry leaves and fry for few seconds .

Now add the marinated yam and mix well.

Stir fry till crisp and golden brown.

Serve as a side dish .

NOTES

  1. Instead of tamarind you can add amchur pwdr while adding the masalas or drizzle few drops of lemon juice in the end for tanginess.
  2. I like slicing thinly to reduce cooking time and also kids dont make fuss about eating.
  3. Instead of garam masala y not try sambar pwdr or pav bhaji masala.
  4. Also sprinkle little chaat masala in the end.
  5. You can add roasted fennel seeds pwdr while marinating instead of adding whole in tempering.
  6. Try same recipe with potato.
