INGREDIENTS

  • Boiled Sweet corn –  1/2 cup
  • Veg stock – 4 or 5  cup – Basic home made stock
  • Finely chopped beans ,carrot and cabbage – 1/2  cup
  • Corn flour – 2 or 2 ½ tbsp mixed with 4 tbsp water
  • Butter – ½ tbsp
  • Salt to taste
  • Pepper pwdr as required [ use white pepper pwdr ]
  • Spring onion greens finely chopped for garnish

How to prepare stock at home –

Boil 7 cup of water ,add chopped  onion + carrot + potato or any other veg.

Boil the stock ,till it  reduces to 5 cups. Strain the stock and use it .

OR

Use maggi veg or non veg magic cubes .disslove it in water and use it .

METHOD

Heat butter in a pan .

Add sweet corn + cabbage + carrot + beans and stir fry for 1 minute.

Add the stock ,boil it for 3-4 minutes.

Add salt + pepper and mix well .

Add cornflour mixture ,stir well and simmer for 2 – 3mins till the soup thickens.

Off the flame and garnish with spring onion greens.

Serve hot .

NOTES

  1. The colour of the soup changed as I added black pepper .
  2. Add the pepper pwdr while serving so that the colour doesn’t change.
  3. You can add ½ tsp sugar .
  4. Non vegetarians can add cooked and shredded chicken together with the veges.
  5. You can also add ajinomoto.
  6. While serving you can also drizzle few drops of vinegar + soya sauce.
