Tandoori chicken

                                                                       CHICKEN TANDOORI

INGREDIENTS

  • Chicken full leg piece – 4
  • Fresh cream – 2 tbsp [ optional ]
  • Red chilli pwdr – 2 tsp or as per taste
  • Kasoori methi – 1 tsp
  • Turmeric pwdr – ½ tsp
  • Coriander + cumin pwdr – 1 tsp
  • Garam masala – 1 tsp
  • Chaat masala – 1/2 tsp
  • Thick fresh Curd – 2 tbsp
  • Ginger garlic paste – 1 ½ tbsp
  • Oil – ½ tbsp.
  • Lemon juice – 1 tsp
  • Tandoori colour – 2 pinch
  • Salt as per taste
  • Chaat masala + lemon + onion rings + green chutney for serving

NOTE – We can use everest tandoori masala powder .

PREPARATION

Clean the chicken legs well.Run sharp knife over it as u do for removing the scales of the fish to remove the sticky thing on it. First give a slit near the place you hold the tangdi .[leg] Then give few slits on the flesh.

Mix all the above ingredients curd + cream + salt + masala pwdrs + ginger garlic paste + oil + lemon juice + food colour and make the marinade.

Apply this marinade all over the leg piece and also into the slits.

Marinate it for minimum 3 hrs or over night. More the marination better the absorbtion of masalas and better taste.

                                                                          METHOD – 1 [ PAN FRY ]

Heat  2 tbsp  oil in a nonstick pan ,place the marinated legs on it cover it  and fry till it sweats completely. [ leaves water ]. – QUICK OIL FREE CHICKEN FRY – try this recipe

Once the water is released , remove the lid and fry on medium flame by turning over again and again till the water evaporates completely and oil is left .

Now fry on medium low flame till the chicken is cooked .

Remove on a absorbent paper .

Sprinkle chaat masala.

Serve with green mint chutney + onion rings + lemon.

                                           METHOD -2 [ MICROWAVE CONVECTION MODE ]

Preheat the oven at 200*C.

Grease the grill stand place the chicken legs on it and roast for 30-  35 minutes by turning the leg pieces and applying oil or butter over it.

Cooking time differs in different oven.Keep checking.

                                              METHOD – 3 [ MICROWAVE COMBINATION 3 ]

Put the chicken on high rack or microwave non stick tava and microwave for 10 mins on COMBINATION 3.

Brush oil or ghee and grill it for 15 – 20 mins.

[ I have used this method as I have a LG microwave with this function ]

                                                                      METHOD – 4 [ OVEN ]

Bake it in preheated oven at 400 F.for 20 -25 mins .

Again broil it for more 15 – 20 mins at same temperature.

                                               METHOD FOR GIVING SMOKING FLAVOUR

INGREDIENTS

  • Natural charcoal [koyla] small piece.
  • ½  tsp ghee.
  • Small steel bowl.[katori]
  • Pan with a lid.

METHOD.

Take a small piece of natural charcoal and burn it directly on the top of the stove burner on high flame with a help of tongs. Keep rotating the charcoal so that it burns from all sides.

Place the burning charcoal in a small steel bowl [katori].

Place the bowl in centre of the pan in which the fried chicken legs are kept.[as shown in the pic]

Now add a tsp of ghee to the hot charcoal.

The coal will start smoking , immediately cover the pan with the lid for 30 seconds.

The smoke gets trapped inside the chicken giving it a smoky tandoor flavour.

FOR GREEN CHUTNEY – grind together coriander leaves + mint leaves + garlic + ginger + green chilli + curd + lemon juice + salt into a fine paste

NOTES

For perfect taste marinate it for 12 hrs.

Adjust masala pwdrs as per your taste.

Use mustard oil.
